SHG EP Mexican Coffee – FEDESI
Roasting: Very-Black
It is the most intense taste profile. It feels wilder, especially thanks to the more floral notes on the finish. The dark roast offers a good length on the palate, and very much eliminates the taste of fruit to replace it with baking aromas reminiscent of dark chocolate.

Federación de Sociedades Cooperativas Cafetaleras de la Sierra Madre FC de RL (FEDESI), was founded by the need of six groups located in the municipalities of Motozintla and Siltepec, their objective was to find a way to support small producers in the region who were looking for new markets for production, funding and government support. Each small group provided their own coffee production for the first year of the organization, it was in 2016, the coffee was sold locally and producers could access higher prices.
All producers are from Escuintla, Huixtla, Motozintla or Siltepec located in Chiapas, the famous state of Mexico for its coffee quality. In particular, Motozintla (1200m) and Siltepec (1500m) produce exquisite coffee due to their high altitude.
Most of the partners of the FEDESI cooperative are small producers, who each have at least three acres. Even if they are small producers, each one has their own wet mill process and dries the coffee on their own terraces. The organization has grown stronger and achieved many of its goals. The 3,279 producers now have a certified volume of 32,000 sachets of organic fair trade coffee. Together, they established a renovation program, built a nursery, and provided training on treating leaf rust to producers.
